Savory potato: an almost recipe

Sometimes my kids tell me that they don’t want foods that are “too sweet.” Um, what about ice cream or Nutella, then? Never mind. The excellent sweet potato, to which I never add anything else sweet, is sometimes scorned just the same.

Last night, I chopped a sweet potato and two small onions. Then I plopped that in a cast iron skillet with some bacon fat (tidily poured through a coffee filter and stored in the fridge). Later I added a minced ginormous clove of garlic. A bit of salt at the table, and no one said it was too sweet. Vary proportions according to what you like. Your mileage may vary.
